Do you enjoy the popular takeout staple known as pad thai? If so, you might want to consider transforming this slurp-worthy noodle dish into a hefty sandwich (or two).
Don’t think it’s possible? Just ask blogger and cookbook author Kelly Pfeiffer of Nosh and Nourish, who managed to turn this tangy, slightly sweet entrée into a scrumptious new meal.
“Why have I never thought of this combination before?” asks Pfeiffer on her blog. “I love peanut sauce. I love eggs. I love pad Thai. Soooooo I combined them all into one fabulous, mouthwatering sandwich.”
Skeptical? Don’t be. Just like the original, this meal highlights several familiar, beloved ingredients, including fried egg, zesty lime juice, and soy sauce. And for that authentic peanutty taste, Pfeiffer incorporates her homemade chickpea nut butter.
But since she’s working with bread, Pfieffer had to omit those soggy noodles. The upside? There’s less carbs and guilt, and no compromising on flavor.
