Spinach & Turkey Bacon Salad

Ingredients

6 slices JENNIE-O® Turkey Bacon, cut into pieces

¼ cup diced red onion

1 ½ cups sliced fresh mushrooms

2 (10-ounce) packages fresh spinach (washed, dried and stems trimmed)

2 tablespoons olive oil

1 tablespoon sugar

2 tablespoons cider vinegar

Directions

Heat skillet over medium-high heat; spray with cooking spray. Cook bacon, onion and mushrooms 5 to 7 minutes or until bacon is crispy and vegetables are tender.

Toss spinach, bacon, onion and mushrooms in bowl. In small bowl, whisk olive oil, sugar and vinegar. Drizzle dressing over salad; toss to coat.
