Mashed potatoes featuring spicy chorizo and white cheddar cheese will become a new holiday favorite.

Ingredients
3 pounds Yukon gold potatoes, unpeeled
8 ounces dry spicy chorizo, diced
½ cup butter
½ cup chopped chives
salt and white pepper, if desired
1 cup shredded white Cheddar cheese
Directions
Heat oven to 400°F. Wash potatoes well and place in large saucepan. Cover with cold water. Simmer on medium heat 20 minutes or until potatoes are tender. Drain.
In large skillet over medium heat, cook chorizo in butter until crispy. Smash drained potatoes with potato masher, do not over mash. Add smashed potatoes to skillet with chorizo and fold until potatoes are red and chorizo is evenly mixed. Add chives. Season with salt and white pepper, if desired.
Place in 3-quart greased baking dish. Sprinkle cheese on top. Bake 5 to 7 minutes or until cheese is melted.
